As part of this role, you will be responsible for the following:
- The management of kitchens: rostering, purchases, stock control, deliveries, HACCP and hygiene, etc.
- Financial understanding (Food Gross Profit, Payroll, Costs & Projections.)
- Prepare food efficiently and at a high level of quality
- Operate a spartan and hygienic waste management program
- Train and develop your team
- As needed, collaboration with other hotel departments and managers
Candidate must have a minimum of one year's experience as a Sous Chef in a four or five-star hotel, and be familiar with fine dining/high-volume banquets.
You will also demonstrate excellent kitchen management procedures, extensive HACCP knowledge, and excellent teamwork and leadership skills.
