Certificate in Food Hygiene Awareness

Level 1

The Certificate in Food Hygiene Awareness is a basic qualification appropriate for anybody wishing to have an awareness of food hygiene. It has also been designed to help the food and catering industries to provide training to a safe level for those who perform “low risk” tasks such as clearing tables, maintaining stores, “meals on wheels” and other such similar duties. This qualification is also relevant to employees working in food factories but not in “high risk” sections of the plant.

Fundamentals of Food Hygiene

Level 2

The Fundamentals of Food Hygiene is a qualification covering the basic principles of food hygiene. It is valuable as a free-standing qualification or as an addition for people following other training programmes. It is useful for anybody who handles food, including the general public, and is particularly suitable for those working in kitchens or undertaking front-line duties in preparing, processing or retailing food. The emphasis of this qualification is placed on the correct handling of “high risk” foods and the importance of temperature control. The qualification provides the basic knowledge for candidates to be safe food handlers and to be able to play an effective role in a food business operator’s food safety management system.

Managing Food Safety in Catering

Level 3

Managing Food Safety in Catering is designed principally for senior staff and those who are managers of food handlers in a food business. The Outcomes have been designed to ensure that supervisors and potential managers are aware that, in addition to traditional hygienic practices, they should seek to identify and prevent food safety hazards at all stages in food production, preparation and service, thus enabling them, and the staff they manage, to operate in a safe, hygienic and efficient manner.

The course and qualification may be taken as a stand-alone certificate, or as part of a wider course of training. The aim of this common core qualification is to provide an in-depth knowledge and understanding of food safety and the application of food safety management systems.

This qualification provides supervisors and managers of food handlers with an advanced knowledge and understanding of how to manage food safety within a food business, how to control hazards and the legal responsibilities of food businesses. It emphasises a preemptive HACCP approach to food safety management and meeting legal obligations.
