Chef De Partie Job Description

A Chef De Partie is a chef with responsibility for a particular section within the kitchen and any Chef De Partie Job Description you’re drafting needs to reflect these duties adequately. These sections, while differing from kitchen to kitchen, usually encompass some, or all, of the following: Sauce, Fish, Grill, Vegetables & Starches, Starters and Larder. In non European locations, especially in the United States, Chef De Parties’ are often referred to as “Line Chefs” or “Line Cooks.”

A common exception the Chef De Partie as “section head” is the Pastry Section which is usually run by the “Pastry Chef.” The Pastry Chef may, or may not, have one or more Chef De Partie(s) of their own with responsibility for distinct subdivisions within the pastry section. Pasty aside it’s safe enough to translate Chef De Partie as someone with responsibility for a given section within the kitchen.

The Chef De Partie role often involves a degree of supervision of more junior chefs, either apprentices or Commis Chef(s), although this depends on the size of the business. What’s not up for debate is that a Chef De Partie, assisted by juniors or not, is responsible for the output of his, or her, section. This role is overwhelmingly an operational one. From time to time, especially in kitchens operating without a Chef Tournant, Chef De Parties’ are expected to fill in for the Sous Chef, assuming their greater supervisory responsibilities and coming into a more direct collaboration with, depending on the kitchen brigade structure, either the Head Chef or the Executive Chef.
