Perhaps more interestingly to you, I’m assuming you are a restaurant professional probably a chef, is the fact that Chang has protocols worked out with his staff on what to do and how to behave when a critic arrives in one of his restaurants.
The feedback of restaurant critics isn’t the only thing Chang fears, no, it’s what his parents think of his cooking that really keeps them up at night.
