The Executive Chef contributes to top-line sales and profitability through premium customer service, exceptional team leadership, exceeding industry standards in food safety, presentation and quality. The Executive Chef will be responsible for overseeing the entire high-volume production kitchen and provide excellent leadership and support to senior team members who can then in turn, successfully lead and support the culinary team. This position requires a high-level of administrative functions including menu writing and development, fully costed batch and prep recipes using food costing software, adherence to food and labour budgets and positive leadership in a professional environment. The Executive Chef will oversee special/high-end off-site catering events and support our Lead Production Chef and Pastry Chef in running the day to day scratch production kitchen.
Ability to positively lead the senior culinary management team to manage all aspects of food preparation, product handling, equipment utilization and food safety.
Maintaining operational control of all food purchasing including bid/tendering to purveyors including weekly and monthly food inventories.
Fostering and promoting a meaningful and cooperative working environment that drives growth and develops people and talent within the organization.
Developing new menus items, testing new and existing menu items and creating recipes in both batch and item production. Control costs without compromising standards, improving gross profit margins and other departmental and financial targets. Must have experience with costing software and be able to develop & create executable recipes within pre-established food cost controls.
Maintaining and developing the recipe library, production schedules, plating guides, ensuring photographs are current and documented. Ensuring kitchen and catering staff prepare menu items following recipes, yields and plating guidelines and are in accordance to company and quality standards
Creating and reviewing schedules, assignments and anticipated business level needs. Ensuring employees have all required certifications and training. Leading and maintaining standards for kitchen and employees to ensure all meet food safety standards concerning sanitation and personal hygiene.
Contribute to goal of 100% client satisfaction through personal commitment to customer service and leading the culinary team by example.
Building strong and effective communication within the operations team - continually look for opportunities to provide feedback, engage with other senior management team members and bring relevant and creative ideas that align the company for successful growth.
Experience in a commercial kitchen for a minimum 10 years in a leadership role. Must see the value in positive leadership and mentoring and building up team members for success.
Must have excellent communication or organizational skills and be able to communicate clearly with clients, other team members both in written form and verbally.
Post-secondary education, preferably in hospitality and/or business related field
Strong business acumen, including an understanding of budgets and operating costs -Proven track record of cost control including food, equipment, labor and waste management.
Excellent understanding of the upscale dining industry and off-site catering
Must be able to coach, mentor and provide leadership to all culinary team members either directly or through senior team leaders. Ensuring each team member is fully trained and developed in their roles. Provide performance, appraisals, and disciplinary action within the values and culture of the company. Previous leadership experience in the culinary field and a continuous desire to lead and mentor your culinary team.
Strong interpersonal and problem solving abilities.
Experience with off premise catering in high-volume. Must be able to work in a standing position for long periods of time if required. Be able to reach, bend and lift up to 50 lbs.
Ability to work well under pressure in a fast-paced environment.
Must have a clean driver abstract and be insurable on company vehicle policy.
Annual salary based on experience with annual profitability incentive
Three weeks paid vacation with four weeks paid vacation after 5-year anniversary
