The type of pastry chef that we are looking for is someone who has taken great care throughout their career to work constantly in the best kitchens possible.
A pastry chef with a background in hotels with a 4 Star Deluxe rating and above would be ideal. However, Relais & Chateau experience and experience in kitchens with at least 2 AA Rosettes would also be beneficial. A significant part of the job here is working with chocolate, so it is an area in which you'll need to show considerable confidence as well.
